The Turbo Air MST-72-N M3 Series sandwich and salad prep table streamlines high-volume production with precise cooling and smart workflow features. Its self-cleaning condenser uses a fine mesh filter and rotating brush to automatically remove dust, reducing maintenance. A cold bunker system forms a cold air shield around the pan area to hold 33°F–39°F, protecting ingredients during frequent lid openings. The rail accommodates (18) 1/6 size, 6 inch deep pans, and a 9-1/2 inch deep, 1/2 inch thick high-density polyethylene cutting board provides a generous prep surface. Inside, digital temperature control and monitoring, LED interior lighting with fan control, and (3) adjustable heavy-duty PE-coated wire shelves support organized, efficient service.
