The UNOX XAVC-0511-EPRM ChefTop MIND.Maps™ Plus is an electric countertop combi oven that blends heat, hot air flow, and steam to streamline production. Load up to five 1/1 GN or five 12"x20" hotel pans with 2-11/16" shelf spacing to move batches efficiently from prep to plate. Use it to roast, steam, or bake with consistent results across a busy service.
Program and store menus with MIND.Maps™ technology to reproduce settings shift after shift. WiFi/USB connectivity enables data transfer to HACCP software, helping teams document cook cycles and simplify compliance. Roast proteins, steam vegetables, or finish sides in hotel pans to keep banquets and à la carte tickets on pace.
A stainless steel interior and exterior with a glass door stands up to daily use, while the right-to-left door opening fits varied line layouts. ENERGY STAR® certification supports energy-conscious operations, and the 7.8 kW, 19.5 amp electrical load suits many commercial kitchens. An included water line connects to a 3/4" MPT supply within three feet for quick setup.
