Product Description
Power high-volume production with the UNOX XAVL-2021-GPRS gas floor-model combi oven. Load up to (20) 18" x 26" full-size sheet pans or (40) hotel pans, then roll the included trolley straight to service. With 307,093 BTU and a steam-and-hot-air cooking platform, it tackles roasting, baking, and steaming on tight timelines.
Use MIND.Maps™ technology and a programmable menu to standardize recipes and reproduce results across shifts. 3-5/16" shelf spacing supports organized loading, while the glass door and right-to-left door opening simplify checks in busy cooklines.
Marine grade stainless steel inside and out delivers durability and easy cleaning for demanding kitchens. ENERGY STAR® certification supports operational efficiency, and the oven uses gas heat with a 120v/60/1-ph electrical connection (2.6kW). For sheet-pan use with the trolley, add adapter grids GRP521; gas line not included.
