Engineered for high-volume kitchens, the UNOX ChefTop MIND.Maps™ Plus XAVL-2021-NPRS gas combi oven streamlines production with roll-in loading and precise control. It combines heat, hot air flow, and steam to deliver consistent results across up to 40 hotel pans or 20 full-size sheet pans. ENERGY STAR® certification supports energy-efficient performance during peak service.
Accelerate workflow with a right-to-left opening glass door and an included trolley that glides trays in and out quickly. The 3-5/16" shelf spacing helps stage mixed menus, from roasting proteins to baking sheet-pan items and steaming vegetables. Note: the gas connection line is not included and must be purchased separately.
MIND.Maps™ technology with a programmable menu enables repeatable, multi-step cooking for uniform results across shifts. Marine grade stainless steel construction inside and out withstands demanding environments and simplifies cleanup. Use the included trolley for 40 hotel pans; adapter grids GRP521 are required when loading 18" x 26" sheet pans.
