Quickly chill up to 100 lbs from 194°F to 37°F in 90 minutes, or freeze 70 lbs from 194°F to 0°F in 240 minutes. Utilize the included core temperature probe and programmable cycles to hit precise targets for seafood, sauces, proteins, or dough. HACCP monitoring and an LCD temperature display help document compliance and maintain consistency.
Accommodate (12) 18" x 26" x 1" pans with 2.56" shelf spacing to stage batches for banquets, bakeries, or commissaries. A stainless steel cabinet with self-contained, bottom-mount refrigeration, manual defrost, and adjustable feet supports reliable performance and easy placement in tight prep areas.
