Rapidly chill 140 lbs from 194°F to 37°F in 90 minutes or freeze 100 lbs from 194°F to 0°F in 240 minutes to move hot production into cold storage fast. This helps chefs stage sauces, proteins, and sheet-pan batches without bottlenecks.
Unify multiple tasks in one reach-in: blast chill, freeze, thaw, retard/proof, and slow cook/warm to match your menu and daypart. Load up to sixteen 18" x 26" x 1" pans on 2.56" shelf spacing, while the self-contained, bottom-mounted system keeps service access simple. Stainless steel construction stands up to daily kitchen demands.
Program, monitor, and document with electronic controls featuring an LCD temperature display, HACCP monitoring, and RS 485 connectivity. The included core temperature probe drives precise cycle control, and a safety micro-switch supports operator safety. Manual defrost and adjustable feet streamline maintenance and installation.
