The Vollrath 69718S-2-S Signature Server Custom Downdraft Vent System brings professional cooking to serving lines and exhibition stations. It pairs an 18" tall tempered curved breathguard with a self-contained recirculating downdraft to capture smoke and odors at the source. Use it to cook-to-order while maintaining clear sightlines and guest appeal.
Drive throughput with two Mirage 59501DV drop-in ranges included in the base, giving operators flexible multi-pan production. The downdraft package integrates two grease and two carbon/particulate filters to manage grease-laden vapors and particulates. 5" casters and adjustable legs support easy movement and stable setup between service periods.
Safety and compliance are built in with an ANSUL R-102 fire suppression system, UL710B/UL197/UL Sanitation listings, and NSF4 certification. The system meets EPA Method 202 from Section 59 of UL710B and NFPA96 requirements, with emissions < 5.00 mg/m3 using 30% fat gr
