The Blodgett HV-100E SGL electric hydrovection oven is ideal for most high-protein, center-of-the-plate items like roasted meats, baked poultry and baked fish. It does an excellent job on casserole type dishes such as lasagna, baked macaroni and meatloaf which must be cooked to a safe internal temperature without overcooking the exterior. Breads, rolls and other yeast-raised products will exhibit greater “oven-spring” when baked in the Hydro Mode.

The Blodgett hydrovection oven features a full welded, extruded angle iron frame that not only keeps ovens square and true but offer the most durability and versatility among other ovens on the market. In addition, they offer better lifetime performance due to the hybrid insulation with a layer of Superwool HT for improve insulative qualities, designed to keep your oven running at peak performance for longer. This hydrovection oven contains a detachable core thermometer and a six-tube heater element that boosts temperatures between 200 and 500 degrees Fahrenheit. The hydrovection setting moistens the oven, whereas the hot air setting is best for cookies and cakes. All kitchen workers can use the 7" SmartTouch controls, which can save up to 100 different recipes for quick and easy setting adjustments. You may effortlessly download or upload recipes via a USB link.

This Blodgett oven contains innovative Helix technology that forces air into the oven cavity, efficiently recirculating the heated air through the interior compartment, which reduces energy consumption and increases performance, while decreasing cook times. A four-speed auto-reversing fan creates an even baking environment, ensuring that foods are cooked thoroughly and properly. A strong and silent motor drives the multi-speed fan. Equipped with an exclusive dependent door system that creates a 100% sealed environment, this convection oven comes with larger Low-E glass doors containing "cool-to-the-touch", resulting in higher cooking efficiencies while reducing surface temperatures to 80°F. Oven doors have a large swing radius and handle that can be used effortlessly even with wet or muddy hands, and have twin tempered viewing panes.
