The Alto-Shaam 1000-TH/I offers uniform and consistent cooking on a daily basis, low shrinkage of bulk or portion-cut protein items, higher food moisture content, and significantly longer holding life. This Alto-Shaam cook and hold oven is a double compartment oven with a 20-gauge stainless steel exterior and a door with a magnetic door latch. The double deck design of this cook and hold oven has a capacity of 120 lbs. per compartment. The holding oven is equipped with two stainless steel side racks with eleven pan positions per compartment. These features allow you to cook high volumes of products at a single time.

The oven includes one simple control with ON/OFF power switch; cook temperature knob, 200° to 325°F hold temperature knob with a temperature range from 60° to 205°F digital display, and UP/DOWN arrows to set cook and hold time. Control features indicator lights for the cook, hold function, and when the oven is calling for heat.
