On a daily basis, the Alto-Shaam 1000-TH/II electric cook and hold oven provides uniform and consistent cooking. This Alto-Shaam oven will reduce shrinkage of bulk or portion-cut protein items, while keeping food moisture content high to provide perfectly cooked items. This single compartment Alto-Shaam cook and hold oven features a 20-gauge stainless steel exterior and a magnetic door latch. The twin deck design has a capacity of 120 lbs. each compartment. Three stainless steel side racks with eleven pan slots are included in the holding oven. These capabilities enable you to cook large quantities of food at once.

This cook and hold oven has a single control with an ON/OFF power switch, a cook temperature knob, a 200° to 325°F hold temperature knob with a temperature range of 60° to 205°F digital display, and UP/DOWN arrows for setting cook and hold time. The control has indicator lights for cooking, holding, and heating.
