The Carter-Hoffmann HL9-18 full-height mobile heated cabinet has a dial control mechanism that enables the user to adjust the humidity on low, medium, or high and the temperature between 85- and 200-degrees Fahrenheit. The device can generate relative humidity of up to 90% regardless of the heat setting. This technology enables proofing and holding to be done inside the cabinet and has separate dials for warmth and humidity.

The stainless steel duct system ensures that heat is distributed evenly throughout the device and produces consistent results. This duct may be removed without using any tools, making it simple to clean. The 5.7-quart water reservoir and duct may both be taken out for simple dishwashing cleaning and emptying. The reservoir of this Carter-Hoffmann HL9-18 humidified holding cabinet is made of tough polycarbonate, and it has a clear tint so the user can keep an eye on the water level.
